We already know how Pierre does things!! He usually takes a photo of the girl with them holding up their ID and then they 'sign' documents while he records them putting signatures on documents. Go back and watch the Viola Bailey casting or the Sladksy Mesic Casting (with Vera - the mom).

He probably did this with Florencia and is just did show it to us.

Pierre already showed us the clip where he is speaking to her at Dinner (with Isalyn) where she was reluctant to sign anything and he had to negotiate with her
